Classified as a pseudocereal and hailed as a superfood, Amaranth (Rajgira) flour is a single-ingredient, whole grain, organic flour that is great for gluten free cooking. Its earthy, nutty flavour works well in a variety of dishes - cakes, waffles and pancakes, bread, crackers and more.
Amaranth flour has a malty flavour that works great in sweet and savoury recipes. Try using it in combination with other flours - as it makes for a nice addition to gluten free blends that also contain millets (bajra, jowar)! Because you know it contains a bunch of protein, it can be a good one to layer in with either whole wheat, emmer wheat, or all-purpose flour when baking for a protein boost.
