Tur dal (Pigeon Pea/Tuvar) is a nutritious staple legume and is used to make dishes like yellow dal and khichdi, including the traditional sweet called "Dinda." This variety includes the outside skin, which provides extra fibre, though may not be called for in your recipe. Tur dal takes a little longer to cook than other lentils but the extra time is worth its rich flavour which complements any seasoning and spice added to it.
